Thyme Heals Chicken



  • 8 x chicken pieces (breast, drumsticks etc)
  • 300ml double cream
  • 1 large onion
  • 160g mushrooms
  • 1 Tbsp of fresh thyme or 1 ½ tsp dried Thyme (Charged for healing)
  • Olive oil
  • Salt and pepper
  • 2 x cloves of garlic chopped
  • 1 x chicken stock cube


  • Pre-heat the oven to 180C
  • In a large pan on a medium heat add a little olive oil.
  • Gently fry the finely sliced onions for 3- 4 minutes to soften then add the seasoned chicken pieces.
  •  Fry until you have browned the chicken pieces all over. Now add some finely chopped garlic and thyme and then the sliced mushrooms.
  • (Thyme heals wounds or so they say, magical herb chase illness away!)
  • Next make up 300ml of chicken stock with the stock cube dissolved in boiling water, turn the heat up on the pan and add the stock.
  • Reduce down the stock for around 3 minutes.
  • Finally add the cream, reduce down for a further minute on a medium heat. Cover and transfer to the oven.
  • Bake in the oven for approximately 45 minutes, remove from the oven and serve with fresh steamed greens.
