Black Bean Burgers

Ingredients (makes 4)

  •  1 tin (400g) black beans drained and rinsed
  • ½ red pepper diced
  • 1 small onion chopped
  • 1 clove garlic crushed
  • 1 egg
  • 1 Tbsp chilli powder
  • 1 Tbsp cumin
  • 1 handful fresh coriander chopped
  • 1 Tsp Tabasco sauce (optional)
  • 2 slices stale bread grated


  • Empty the beans into a bowl and mash with a fork until you have a rough paste.
  • Add the chopped pepper, garlic and onion and mix well.
  • In a separate bowl mix together the egg, chilli powder, cumin, fresh coriander and Tabasco.
  • Pour the egg mixture into the mashed beans. Stir to combine well.
  • Mix in the grated bread until the mixture is sticky and holds together.
  • Divide the mixture into 4 burgers.
  • Barbeque or grill on a high heat for approximately 15 minutes turning regularly.
  • Serve in burger buns with fresh salad and relish.
